Triple Souvlaki Skewers with Tzatziki Recipe
Greek Souvlaki is traditionally made with chicken, lamb, or pork. In this Triple Souvlaki Skewers with Tzatziki Recipe, we have prepared all three meats and combined them onto one skewer to create a simply fabulous taste. The Tzatziki sauce brings all the flavors together. Serve with a nice Greek salad.
If you are not a fan of lamb, substitute tender beef cubes such as beef tenderloin or ribeye. You'll achieve the best flavor by marinating wooden skewers and each of the meats for 2 hours. If using zip lock bags, place the sealed bags into a casserole dish in the refrigerator just in case of leakage.

Skewers & Marinade
15 wooden skewers
5 T. dry white wine (or water)
2 sprigs fresh rosemary
2 sprigs fresh thyme
Pita bread, for serving, if desired
Lamb & Marinade
1 lb lamb leg, cut into chunks
3 T. red wine vinegar
3 T. extra virgin olive oil
2 garlic cloves
2 sprigs fresh rosemary
2 sprigs fresh thyme
Sea salt and black pepper to taste
Chicken & Marinade
1 lb. chicken thighs or breast, cut into chunks
1/2 lemon, juiced
3 T. extra virgin olive oil
2 garlic cloves
1 t. oregano
Sea salt and black pepper to taste
Pork & Marinade
1 lb. pork tenderloin, cut into chunks
3 T. white wine vinegar
3 T. extra virgin olive oil
2 garlic cloves
2 sprigs fresh rosemary
2 sprigs fresh thyme
Sea salt and black pepper to taste
Tzatziki
2 c. strained yogurt
2 large cucumbers, grated and drained
2 garlic cloves, grated
1/2 t. sea salt
1 t. dillweed
3 T. olive oil
Directions
1. In a large casserole dish, combine all Skewer marinade ingredients. Add skewers and let soak 2 hours.
2. To marinate lamb, combine lamb and all lamb marinade ingredients in either a large bowl or zip lock bag. Seal and place in refrigerator for 2 hours.
3. To marinate chicken, combine chicken chunks and all chicken marinade ingredients in either a large bowl or zip lock bag. Seal and place in refrigerator for 2 hours.
4. To marinate pork, combine pork chunks and all pork marinade ingredients in either a large bowl or zip lock bag. Seal and place in refrigerator for 2 hours.
5. After 2 hours, thread one marinated chicken piece, one marinated lamb and one marinated pork piece onto the prepared skewers. Repeat the process leaving 6 chunks of meat on each skewer.
6. Meanwhile, prepare tzatziki. Add strained yogurt, garlic and salt to a serving bowl. Mix to combine. Add cucumber and dillweed and stir well. Drizzle with olive oil. Refrigerate until ready to serve.
7. Prepare your grill or heat a grill pan to medium heat per manufacturer’s instructions.
8. Cook 5 minutes each side or until cooked through.
9. Serve with pita bread, Greek salad, and tzatziki.
